Runners Rice Pudding

Ingredients

2 cups cooked rice

4 cups almond milk

1/2 t. vanilla

1/4 t. cinnamon

1/4 t. salt

1 T. Stevia OR 1/4 cup sugar

Pour the milk and rice into a pot. Bring to a boil and simmer for 15 minutes. The consistency should be like a very runny oatmeal. Take off the heat and add the other ingredients.

Place cling wrap directly on the pudding and let it sit for about 45 minutes on the counter before placing in the fridge.
