Flat Bread Pizza

Kara Goucher’s Flatbread Pizza- 4 servings
as found on Runnersworld.com. (Update: The recipe seems to have been removed from the Runners World website)

Ingredients
4 whole wheat naan flatbreads
1/2 cup marinara sauce
4 tsp. pesto
1 cup shredded whole milk mozzarella
1 chopped yellow bell pepper
1 cup halved cherry tomatoes
1/4 cup sliced red onion
1/2 cup sliced mushrooms
1 diced, grilled chicken breast
2 Tbsp grated Parmesan
8 ribboned basil leaves

Oven: Preheat to 400 degree/ Prepare 2 baking sheets with foil

  • place the flatbreads on the baking sheets
  • spread marinara onto the breads
  • top each with 1 tsp of pesto and swirl into marinara sauce
  • sprinkle mozzarella cheese onto the naan
  • top with vegetables and chicken and sprinkle with Parmesan
  • bake for 12 minutes, or until breads are browned/veggies are soft/cheese is melted
  • top each with basil
